Wild Garlic and Spinach Gnudi

Ingredients (10)

SERVES 2

250g dry ricotta

30g wild garlic

300g frozen spinach

30g goats' cheese

20g parmesan cheese

1 egg

1 pinch nutmeg

1tsp salt

15g flour (plus extra for coating)

2tbsp semolina (can be substituted for flour)

Method

STEP 1

Squeeze as much moisture as possible out of the spinach before mixing it with ricotta, wild garlic, goats’ cheese, parmesan, nutmeg and salt


STEP 2

Add the egg and the flour and mix again. Then place in the freezer for 15 minutes


STEP 3

Roll into small balls and then coat with flour or semolina by rolling on a floured counter and Put some salted water on to boil in a saucepan


STEP 4

Gently add the balls to the boiling water and, when they float to the top, they are ready to serve
