Completely vegan, super easy, super creamy, and even kind of healthy!

Method

Step 1
Start by blending tofu, soy yogurt, vanilla extract, sugar, 50ml of the coffee, and the grounds together
Step 2
Next, whip the aquafaba to stiff white peaks. Takes ages but is impossible to overwhip, unlike eggs! Set aside. Then, fold aquafaba into tofu mixture and set aside.
Step 3
Divide your cake into fifteen individual finger shapes, or prepare your lady fingers. Soak into coffee and chosen spirit
Step 4
Layer biscuits and cream mixture
Step 5
Dust with cocoa powder and leave to set for 8hrs. Afterwards, dust with cocoa again and serve. Enjoy!
