Place a pan of water onto your hob to boil. Peel and dice your sweet potato and when the water is boiling, cook it for 8 minutes until soft.

Once cooked, place your sweet potato into a blender with the butter, the reserved water, salt, pepper and lime juice and blend until a smooth puree is formed. Pour into a bowl, cover with clingfilm to prevent a skin forming and set aside for later

Cut your tofu into cubes, then place a pan with oil onto a medium high heat and then fry your tofu until crispy.
Step 4
When crispy, remove your tofu from the oil and into a large bowl. Add your cumin, paprika, soy sauce, and mirin and mix well to ensure all the tofu is coated
Step 5
To plate up, add a few cubes of the tofu to each tortilla, then drizzle over your sweet potato puree. Feel free to add any other sauces as you desire. Enjoy!
