Method

Step 1

Chop up carrots and celery into three. Finely chop the onion and garlic

Step 2

Sauté chopped onion, celery, carrots and garlic in oil and butter over medium heat for 5 minutes. Season with salt and pepper

Step 3

Add turkey or chicken stock, cooked turkey, bay leaves, thyme and bring to a boil. Season with salt and pepper

Step 4

Add the egg noodles and cook for 8 minutes over medium heat until it is tender. Sprinkle with chopped parsley and serve
