Serves 9


Step 1

Separate the egg whites from the yolks. Whisk the whites until stiff peaks form

Step 2

Add the sugar to the yolks and mix until pale and creamy. Add the mascarpone and mix until incorporated

Step 3

Fold the egg whites into the mascarpone mix

Step 4

Make the coffee and leave to cool. Place a thin layer of the cream at the bottom of the tin

Step 5

Dip the sponge fingers for 2-3 seconds in the coffee then place on the cream. Place half of the cream on top of the sponge fingers, then add another layer of biscuits, then the final layer of cream

Step 6

Sift cocoa powder on top, then chill in the fridge for at least 2 hours. Serve and enjoy!
