Ingredients (12)

SERVES 1

2-3 slices wholemeal bread

4-6 eggs

1/2 onion

1/2 bell pepper

1 handful cherry tomatoes

1 chilli pepper

1tsp salt

1tsp pepper

1tsp paprika

1tsp mixed herbs

1 handful grated mozzarella

1tsp olive oil

Method

STEP 1

Start by slicing your bread into squares and heating oil in a non-stick pan. Once the oil is hot, place the squares of bread in the pan evenly and covering the majority of the pan. Dice the onion and bell pepper and slice the tomatoes and chilli


STEP 2

Beat your eggs and pour over the bread in the pan before adding the onion, pepper, tomatoes and chilli over the top and season with salt, pepper, paprika and mixed herbs. Sprinkle the mozzarella over the top and cover with a lid


STEP 3

Once the eggs are cooked and the cheese is melted, remove from the pan and you’re ready to eat
