Spaghetti Squash Carbonara

Serves 2


Step 1

Season each side of the squash with salt and pepper and drizzle with the olive oil before massaging it into the squash

Step 2

Cover the squash with some foil before placing it into the oven for 40 minutes

Step 3

Remove from the oven and using two forks, shred out the noodles from the squash and transfer them to a bowl

Step 4

In another bowl, whisk together the egg yolks, 3/4 of the parmesan, a pinch of salt and pepper, garlic and gradually add in the hot water to prevent your eggs from scrambling before adding your noodles and combining well

Step 5

Add your mixture back into the squash shells and top with your remaining parmesan cheese before covering up and putting them in the oven for 20-25 minutes

Step 6

Remove from the oven, top with your mozzarella and pancetta, before returning to the oven, uncovered for a final 20 minutes until your pancetta on top is nice and crispy
