Start by seasoning your chicken with 1tbsp fajita seasoning
Next, chop your potato into chip shaped pieces. Season with 1/2 tbsp paprika, garlic granules, salt and pepper. Spray with a touch of frylight then bake flat on a lined tray for 25 minutes at 220C
Thinly slice your peppers. Fry your chicken in a pan with a touch of frylight for a couple minutes on either side until golden/brown. Once they're done add in some olive oil and a touch of water to deglaze the pan then fry your veg and some more fajita seasoning until soft
Finally, layer the potatoes, veg, chicken and mozzarella and place under the grill until melted. Enjoy!
