Shrimp Tacos

Ingredients (15)

Serves 2

200g shrimp

4 tortillas or lettuce leaves

1/2 red onion

1/2 avocado

1/2 red bell pepper

1/2 yellow bell pepper

1/2 apple

1 handful coriander

1tsp salt

1tsp pepper

1tsp garlic granules

1tsp smoked paprika

1 pinch red chilli flakes

1 lime, juiced

1tsp olive oil


Step 1

Start by seasoning the shrimp with ½ tsp salt, garlic powder, smoked paprika, red chilli flakes, the juice of half the lime and olive oil

Step 2

Mix well and prep the salsa by dicing pepper, onion, avocado and apple and chopping the coriander

Step 3

Combine the chopped fruit and vegetables in a bowl and season with ½ tsp of salt, pepper and lime juice before mixing

Step 4

Cook the shrimp on a high heat for 2 minutes on each side or until golden brown

Step 5

Add the shrimp and then the salsa on top of the tortillas or lettuce leaves and enjoy
