Ingredients (13)

SERVES 1

80g shrimp

1 large handful mixed salad greens (your choice of salad)

75g cherry tomatoes

1/2 red onion

1 handful blueberries

1/2 avocado

1/2 lemon (+ 1/4 for dressing)

1tsp garlic powder (plus 1/2tsp for dressing)

1tsp paprika

1 pinch chilli flakes

2tbsp honey mustard

1/2tsp salt (plus 1/2tsp for dressing)

1/2tsp black pepper

Method

STEP 1

In a bowl, add lemon juice, garlic powder, paprika, chilli flakes and salt to the shrimp and mix until well combined. Slice the cherry tomatoes, red onion and avocado


STEP 2

Place the salad greens in a separate bowl with the sliced cherry tomatoes, red onion, blueberries and avocado. Make the optional homemade dressing by mixing honey mustard with salt, pepper, garlic powder and lemon juice


STEP 3

Heat a pan and add cook the shrimp until golden brown before adding into the bowl and topping with the dressing
