Method

Step 1

Preheat oven to 350°F. Begin by peeling and slicing your apples. Toss the apples in some lemon juice to prevent browning and set aside

Step 2

Using a stand mixer on medium-high speed, beat together the salt, eggs and sugar for roughly 5-7 minutes until the mixture triples in size and becomes a pale yellow colour

Step 3

Sift in your flour in the egg mixture and fold it using a rubber spatula

Step 4

Grease a spring form cake pan and add half the apples on the bottom of the pan. Add your batter on top then the rest of the apples. Bake for 50-60. Dust with icing sugar (optional)
