Description

Make this tomato-y traybake with some leftover ratatouille (see my recipe!)

Method

Step 1
Heat the oven to 180°C. Chop your potatoes into irregular lumps, then place on a baking tray along with the sausages
Step 2
Add the tomatoes to the pan, along with salt and plenty of oil. Quarter the lemon, and place the slices on top, then put the whole pan in the oven for 20 minutes
Step 3
Once the potatoes have browned slightly, take out the tray and spoon on the ratatouille. Toss, then return to the oven for a further 20-25 minutes
Step 4
Toss before serving, and scatter on some chopped parsley
