Ingredients (12)

SERVES 1

2 salmon fillets (240g)

90g cooked rice

1/4 carrot, peeled

1/4 red bell pepper, sliced

1tbsp edamame beans

1/4 apple, thinly sliced

1/2 sliced avocado

1tbsp soy sauce

1tbsp sriracha

1 lime

1/2 spring onion, sliced

1/2 tsp sesame seeds

Method

STEP 1

Cut your salmon into cubes and prepare your cooked rice, peeled carrot ribbons, sliced red pepper, thinly sliced apple, sliced apple and sliced spring onion


STEP 2

Add the soy sauce, sriracha and the juice of the lime into a bowl and mix


STEP 3

Brush evenly over the salmon cubes


STEP 4

Cook the salmon in a hot pan, turning after 2 minutes. Cook until golden


STEP 5

Add cooked rice to a bowl along with the salmon, vegetables, apple, edamame beans, some of the dressing used to cook the salmon in and sesame seeds
