Ingredients

Method

Step 1

In a bowl combine tomatoes, garlic, thyme, olive oil, salt, honey and chilli flakes

Step 2

Place the mixture onto a lined oven tray and bake for 20-25 minutes at 180C until roasted

Step 3

Remove the garlic cloves and chop finely

Step 4

In a bowl combine cooked orzo, olive oil, chopped shallot, red wine vinegar, chopped garlic, salt, pepper and fresh basil

Step 5

Add the tomatoes to the orzo along with some feta and mixed nuts. Enjoy!
