Serves 1


Step 1
Add butter and oil to a baking tray and put in the cooker at 180ยบC until the butter is hot and melted
Step 2
Remove the stalks from the mushrooms or slice
Step 3
Press the garlic with the flat of your knife and peel
Step 4
Remove the tray from the oven and add the mushrooms and garlic, season with 1/2tsp salt and return to the oven for 10 minutes
Step 5
Add 1tsp of salt to a pan of water and get that on to boil. Zest and slice the lemon
Step 6
Add the pasta to the boiling water and leave to cook
Step 7
After around 3-4 minutes of the pasta going in to boil, remove the mushrooms from the oven and add the lemon and springs of thyme, shake and put back in the oven for a further 10 minutes
Step 8
With a mug, scoop out some pasta water and set aside incase you want a thinner sauce and drain the pasta
Step 9
Remove the mushrooms from the oven, take out the sprigs of thyme and pour in double cream
Step 10
Add the drained pasta to the baking try and squeeze in half of the lemon along with some of the reserved pasta water if desired, stir and serve
