Method

Step 1
Place the flour on the work surface. Add the eggs and egg yolks and combine till it forms a smooth ball. Wrap in cling film and refrigerate
Step 2
Place the shiitake in a blender with the goose foie. Blend until smooth. Season with salt and pepper. Scoop the mixture into a piping bag
Step 3
Roll out the pasta dough then cut in half. Pass the dough through a pasta machine
Step 4
Pipe the filling mixture onto the sheet of pasta leaving about 3cm between each blob. Lay another sheet of pasta on top and press down. Cut into squares
Step 5
Boil the ravioli for 4 minutes
Step 6
To make the sauce add olive oil, chopped garlic and chopped ginger to a pan. Cook for 2 minutes then add coconut milk and curry paste. Cooke for a further 5 minutes. Add in the ravioli and enjoy
