Raspberry and White Chocolate Muffins

Serves 10


Step 1

Preheat your oven to 180 degrees Celsius. Add all of the dry ingredients into a large baking bowl, except for the plain flour and brown sugar, and mix together, then add all the wet ingredients, except the butter, and mix to create your cake batter

Step 2

Now add the raspberries and white chocolate chips to your batter and mix to combine. Line your baking tray with muffin cases, then add an equal amount of batter into each muffin case

Step 3

To make the crumble topping, add the plain flour, butter and brown sugar into a bowl. Use your fingers to combine the ingredients together until the texture resembles breadcrumbs. Add some topping to each of the muffins before placing them into the oven for 25 minutes

Step 4

When ready, remove from the oven and allow to cool before removing them from the tin and enjoying
