Make this bad boy for healthy, delicious dinner fix
Ingredients
Serves 2
1 ajitama (soft boiled) egg
1 carrot
1 cucumber
2 tomatoes
250g quinoa
170g feta cheese
40g peanut butter
15ml sake
15ml soy sauce
10ml mirin
5g oregano
10g garlic powder
2g black pepper
5g salt
Method
Step 1
Cook the quinoa in boiling water for 9 minutes
Step 2
Peel and cut the vegetables into small squares, then cut the feta into small pieces
Step 3
In a bowl, mix the peanut butter with all the spices and stir
Step 4
Mix the vegetables and cheese with the dressing mixture
Step 5
Assemble the quinoa first on a plate, then top with the vegetables and top with the egg
