Preheat your oven to 200ºC. Pierce holes into the potato with a fork and bake for 1 hour until the inside is cooked and soft, then remove. Allow to cool until cold enough to handle, then peel the skin. Crank the oven up to 220ºC and line a baking tray with parchment paper
In a separate bowl, combine the flour and salt. Add 200g peeled potato followed by oil and 60ml warm water. Mix into a soft, pliable dough and add more water if needed
Shape the dough into 12 balls, place onto a baking tray and bake for 25 minutes. Serve whilst slightly warm and enjoy!
