Pumpkin Gnocchi with Home Made Butter and Sage

Eating seasonal not only guarantees the best produce but also allows you to consume sustainably and environmentally conscious. An in autumn it would be a sin not to use Pumpkin, a wonderfully versatile vegetable. In this easy recipe we are going to use the Delica Pumpkin variety together with red potatoes to make Gnocchi! To take the flavour to the next level all you need is a simple sage infused butter and you are good to go! Get creative with your sauces though as long as you Get Cooking!โ€

Serves 4


Step 1

Bake the pumpkin until soft. Boil the potatoes and peel

Step 2

Smash the potatoes and pumpkin into the flour. Make a well in the middle and add egg, salt, pepper and nutmeg

Step 3

Make the dough into long strips and cut into 1cm pieces. Roll the pieces along a fork

Step 4

Melt butter and olive oil. Add the sage leaves. Boil the gnocchi in salted water then transfer to the sage infused butter. Serve with parmesan crisp and enjoy
