Add 125ml water and butter to a saucepan and bring to the boil. Then add flour and beat over a medium heat for 2 minutes, then leave to cool. Preheat your oven to 200ºC

Beat in the eggs one at a time until you have a smooth, glossy dough

Use 2 teaspoons to make small balls, then place on a tined baking tray and bake for 18 minutes

Remove from the oven, then make a small hold in each ball with a knife and return to the oven for 5 minutes

Add 300ml cream, vanilla paste and icing sugar to a bowl and whip until it forms stiff peaks, then spoon into a piping bag and pipe into the pastry balls

Chop the dark chocolate and heat 150ml double cream in a large pan. Add the chocolate to a bowl, then pour the cream over the top and whisk until smooth and glossy

Dip each profiterole into the chocolate, serve and enjoy!
