Begin with removing the skin from the pork belly and slice into 1 inch cubes. Put to the side and mince 8 cloves of garlic

In a bowl, add the pork, sugar, garlic, peppercorns and pour over the vinegar, soy sauce, oyster sauce & Sprite. Throw in the bay leaves and star anise and give it a good mix. Leave in the fridge to marinade. Preferably overnight or for at least 2 hours

Meanwhile, rinse your rice thoroughly and put on the heat.

Get a wok or large pan on a high heat and add oil. Place in the pork and sear well on all sides. Then pour in the marinade and cover to let the pork cook through. Then remove the lid and let it simmer until the sauce has reduced and the pork is tender

Chop up your chilli into slices and your coriander. Once your rice is fluffy its time to serve. Garnish your pork adobo with chilli and coriander and enjoy!
