Pickled Onion

This quick and easy pickle is perfect with salads, hot dogs, burgers, or anything else that could do with a fruity zing or a pop of colour


Serves 8


Step 1
Peel the onions and slice julienne
Step 2
In a large bowl, mix the salt into the onions and leave to stand for 45 minutes, then place in a sieve and rinse
Step 3
Add water to a saucepan along with lemon juice, peppercorns, mirin, bay leaves and sake. Bring to a boil, then remove immediately from heat
Step 4
Place the onions into a sterilised jar, then strain the pickling liquid in, being sure not to put the bay leaves into the jar. Cover and allow to rest upside down until it cools, then serve and enjoy!
