Start by finely chopping the onion and garlic. Add them to a pan, on medium heat, with the olive oil and 1tsp coriander

Next, chop the bell peppers and tomatoes and add those to the pan as well, with a little salt and pepper

Let that cook down for 10 minutes, then add the canned chickpeas and canned tomatoes. Mix through and let it cook for another 5-10 minutes, then it is ready to serve! Serve on its own or with rice. You can also top with some fresh coriander or some chilli flakes for a little kick
