Pasta Salad with Roasted Tomatoes and Sweet Pepper Dressing

This pasta salad is perfect for summer, it's full of fresh flavours and great as a simple dinner or in a picnic basket


Serves 4


Step 1
Preheat your oven to 150ยบC/gas mark 2. Slice the tomatoes in half, then place onto a roasting tray with 1tbsp olive oil and cook for 45 minutes until slightly caramelised
Step 2
Grill the red peppers until charred, place in a tray and over with clingfilm and allow to steam for 10 minutes. Scrape off the burnt skin and scoop out the seeds inside
Step 3
Place into a blender with garlic, lemon juice, sherry vinegar, 3tbsp olive oil and sugar, then blend until smooth
Step 4
Boil the pasta in salted water until soft, then drain and allow to cool
Step 5
Chop the olives, chives and basil
Step 6
Mix everything in a large bowl, then serve and enjoy!
