Method

Step 1

Place the flour on the work surface. Make a well in the middle and add the eggs. Combine until a dough forms

Step 2

Slice the mushrooms and cook in olive oil with garlic and parsley stems. Once cooked remove the parsley stems

Step 3

Roll out the pasta dough and fold three times. Cut the pasta into long strips and boil. Add the pasta to the mushrooms along with some pasta water and parmesan cheese. Garnish with parsley and enjoy
