STEP 1

Start with 2 chicken breasts cut into halves


STEP 2

Season with cajun seasoning (paprika, garlic powder, onion powder, salt & pepper, cayenne pepper, oregano and thyme) and drizzle with olive oil. Massage until evenly coated.


STEP 3

Place in a high heat pan and season the other side. Cook for 5 minutes and then flip.


STEP 4

Lower the heat. Add onions, red and green bell pepper, sliced red chillis, 1 cup of uncooked rice, 2 cups of water.


STEP 5

Cover and cook for 12 minutes, stirring halfway through.
