STEP 1

Add diced chorizo and a spoon of pesto to a large frying pan. Stir and fry for a minute.


STEP 2

Add diced red onion and fry for a further four minutes before tipping in the egg and tilting the pan to create a thin layer.


STEP 3

Season with a pinch of salt and pepper and then place a wrap on top of the mixture, pressing it down so it sticks to the egg.


STEP 4

After a minute, flip it on to the other side and add in some grated mozzarella, along with spinach and sriracha sauce.


STEP 5

Fold it in half and enjoy!
