1 red bell pepper
1 medium carrot
1tbsp white miso paste
2tbsp avocado oil
Pepper (to taste)
Salt (to taste)
Chop the pepper, carrot and broccoli and add to a bowl along with the sweetcorn and chickpeas
Mix the miso, avocado oil and honey in a small bowl along with salt and pepper
Pour the mixture over the sweetcorn, carrots, broccoli, chickpeas and pepper, mix well and place on a lined oven tray
Place in the oven at 220ºC/425ºF for 17-20 minutes, serve and enjoy!
