Description

Super easy mint chocolate pudding. Quick to make and fun for the family and kids!

Method

Step 1
Preheat your oven to 180 degrees Celsius. Start by finely chopping your white chocolate into small flakes
Step 2
Into a heat proof mixing bowl add your dark chocolate, butter and peppermint essence. Place the bowl on top of a pan of simmering water (Bain Marie) until the ingredients have melted, stir throughout to combine the butter and chocolate
Step 3
In a separate mixing bowl, add your eggs and egg yolks. Also add the caster sugar and whisk together until light and combined
Step 4
Then, sieve in the flour and add the majority of the white chocolate (saving some for topping later). Pour in the melted chocolate and butter and fold all the ingredients together, trying not to knock out too much air
Step 5
Add the mixture into butter greased cupcake tray, filling each part 3/4 of the way up. Create as many as you want and keep the rest of the mixture in the fridge for up to 3 days. Bake in the oven at 180 degrees Celsius for 10 minutes
Step 6
Once they’ve come out the oven, place the chocolate puddings upside down in the centre of a plate. Place on a scoop of creme fraiche, sieve over a dusting of cocoa powder and finish with a sprinkle more of white chocolate flakes
