Mexican Chicken & Rice

Ingredients (11)

SERVES 2

2 chicken breasts, diced

175g cooked rice

1/2 tin of sweetcorn

70g kidney beans

1/2 white onion, chopped

Finely chopped garlic

1tsp salt & pepper

1tsp cayenne pepper

1tsp ground cumin

Olive oil

Fresh, chopped coriander to garnish

Method

STEP 1

Dice the chicken and top with olive oil, top with salt, pepper, cayenne pepper and cumin. Mix thoroughly


STEP 2

In a pan, put a splash of olive oil and lightly fry the chopped onion and garlic


STEP 3

Move the onion and garlic to one side and then go in with your seasoned chicken. Cook for 5 minutes on each side


STEP 4

Add in your kidney beans and sweetcorn. Mix and cook for a couple of minutes


STEP 5

Finally, add your cooked rice and all the spices (salt, pepper, cayenne pepper and cumin) and top with freshly chopped coriander. Serve and enjoy!
