Chop onion and bell/sweet peppers finely. Add olive oil to a pan, then once hot add the peppers and cook on medium heat. Add the chili powder, salt and paprika and cook for 4/5 minutes until the onion-pepper mix starts to soften
In the meantime, grate the tomato in a bowl. Once the onion-pepper mixture is ready, add the tomato and pepper, then stir together
Cook for another 5 minutes and add the tomato paste. Mix well with the other ingredients, then add the oregano and the three eggs. The idea is to scramble them in, so place the heat high and it should take roughly 2 minutes to finish
Top with optional parsley or dill and eat with some bread straight from the pan. Buon appetito!
