Into a pan add the sugar, orange and lime peel, milk and using a small sieve, add the matcha powder. Heat on the hob over a medium-high heat until boiling, then set aside to cool slightly

Crack your eggs and place the yolks into a bowl, then set aside

Slice your brioche into chunky slices, then set aside

Using a sieve, pour your milk mixture into your egg yolks and whisk to combine

Dip your slices of brioche into the mixture, making sure both sides get coated, then set aside

Add your butter to a pan and melt down over a medium-high heat. Add your brioche slices and fry on both sides for 2-3 minutes

Add the cornstarch to your leftover mix, before sieving it into a pan. Heat it over a medium heat until it reaches your desired thickness

To plate up, pour some of your matcha mix onto the plate before then topping with your french toast and enjoy!
