Dice the pepper, onion and chillies, slice the tomatoes and rinse the kidney beans
Heat a frying pan with the Frylight and add the beef mince. Break apart with a spatula and fry for a few minutes until browned
Add the peppers and onions, stir, then add salt, pepper, cumin, coriander, garlic granules, hot cayenne pepper and smoked paprika
Fry for 4 minutes until softened, then add kidney beans and 100ml cold water. Stir and cook until the water has reduced down
Layer the Pop Chips in 2 bowls topped with the mince mixture and 30g mozzarella cheese. Microwave for 20 seconds to melt the cheese, sprinkle over tomatoes and chilli and spoon over sour cream. Serve and enjoy!
