Ingredients (11)

SERVES 8

4 baking potatoes

4 rashers smoked bacon

2tbsp preserved jalapeños

2tbsp cream cheese

1 handful grated cheddar cheese

50g parmesan

1tsp garlic powder

1tsp paprika

1 handful chopped parsley (plus extra to serve)

1tsp salt

1tsp pepper

Method

STEP 1

Bake the potatoes in an oven for an hour at 200ºC until soft all the way through. Place a pan on a high heat and cook bacon until crispy. Once it’s cooked, place on a board and finely chop, put aside and chop jalapeños and parsley, grate the cheddar


STEP 2

Remove the potatoes from the oven, slice in half, scoop out the insides and place those in a bowl. Add the bacon, jalapeños, garlic powder, paprika, cream cheese, cheddar and parsley


STEP 3

Mix together with a fork until well combined and add the mixture into the potato skins and place onto an oven tray, seasoning with salt and pepper and grate parmesan over the top. Put them back in the oven at 200ºC for 10 minutes, top with parsley and you’re ready to eat
