Method

Step 1
On a clean surface combine wheat flour, eggs and 10g salt. Roll into a ball and pass through a pasta machine three times
Step 2
In a pan toast the tomatoes, 3 garlic cloves, 10g ginger and onions until slightly charred
Step 3
Transfer the vegetables to a blender. Add basil and salt. Blend into a smooth sauce
Step 4
To a frying pan add oil, 2 chopped garlic cloves, 10g chopped ginger, chopped mushrooms, chopped carrot and chopped celery. Sauté for a couple of minutes then add minced beef.
Step 5
To the frying pan add red wine and the blended tomato sauce. Bring to the boil
Step 6
To make the white sauce add butter and plain flour to a pot. Cook for a couple of minutes. Add in coconut milk, star anise, curry powder and black pepper. Cook until thick
Step 7
Grease an ovenproof dish with oil. Layer the bottom with pasta dough. Add the mince mixture on top. Repeat three times. Pour the white sauce on top. Top with grated cheese and bake in the oven for 40 minutes at 200C. Serve and enjoy
