Italian cacciatore chicken

Step 1

Pre-heat your oven to 180C. Then, brown the chicken in some olive oil, skin down first, season with salt and pepper. Remove from pan

Step 2

Cook the bacon in the same pan, then remove

Step 3

Chop up the carrot, onion, celery and garlic. Then, add to the pan, cook for 5 minutes

Step 4

Next, add the wine, cook off for around 5 minutes. Then add the chopped tomatoes and tomato purée

Step 5

Add back the chicken thighs and bacon, add enough water to reach halfway up the chicken. Finally, cook for around 35-40min, then serve with rice, mashed potatoes or polenta and enjoy!
