Homemade Baked Beans

Ingredients (14)

Serves 6

3 tins haricot beans

3 tins tomatoes

2 small shallots/1 big shallot

1 sprig rosemary

1 handful wild garlic/3 cloves garlic

2tbsp red wine

1tbsp balsamic vinegar

1tbsp soy sauce

2tbsp ketchup

2tbsp rapeseed oil

1 pinch ground black pepper

2 generous pinches salt

Sourdough (optional, to serve)

Eggs (optional, to serve)


Step 1

Dice the shallots, take the leaves off of the rosemary and shop the wild garlic and add them straight to a pan

Step 2

Cover in oil, add 1 pinch salt and get on a medium heat for 5-10 minutes until the shallots soften

Step 3

Add the tins of tomatoes and let that simmer

Step 4

Add red wine and soy sauce and let it bubble away

Step 5

Season again with 1 pinch of salt and pepper and continue letting it cook

Step 6

Add the ketchup and drained haricot beans, stir, cover and leave for 10 minutes (or longer on a lower heat to let the flavours absorb more)

Step 7

Toast and butter the sourdough, fry the eggs, serve and enjoy!
