Method

Step 1

Chop the chillies and onion and beat the eggs and egg whites together in a small bowl with the curry powder

Step 2

Fry the onion and chilli until soft, then whisk into the eggs. Add the egg mixture to the pan, season with salt and pepper and sprinkle over the cheese

Step 3

Once the eggs have set and the cheese has melted, fold the omelette in half, serve and enjoy!
