1 cup of pasta
2 chicken breasts
1 Red bell pepper
200g chopped tomatoes
3 garlic cloves
2-3 tbspn 3% fat cream cheese
A handful of basil
Paprika or cayenne pepper
Salt & pepper
Cook 1 cup of pasta for 10 minutes until al dente. Remove half a cup of pasta water when done.
In a pan, add the pepper, garlic cloves, chopped tomato in olive oil. Season with salt & pepper and Italian herbs. Fry gently for 5 minutes.
Remove from the pan and put into a blender, along with your pasta water, 2tbsp of cream cheese and a handful of basil. Blend it up.
Dice your chicken, season with salt, pepper and paprika and fry for about 10 minutes
Add the pasta and sauce back into the pan, heat up and serve
