1 cup of pasta
200g lean beef mince
1 red bell pepper
200g chopped tomatoes
4 garlic cloves
1-2tbsp low fat cream cheese
Grated parmesan to taste
2tsp mixed herbs
2tsp chilli flakes
Prep: Chop your bell pepper and tomatoes
Salt the water and put the pasta on to cook, remove half a cup of pasta water and drain the pasta when cooked
In a lightly oiled pan, put your garlic, bell pepper and tomatoes. Cover with salt, pepper, mixed herbs and chilli flakes and fry for 5 minutes.
Add your softened ingredients to a blender along with the cream cheese and a cup of pasta water. Blend it up.
Add your beef mince to the pan, season with salt, pepper, mixed herbs and paprika and brown it.
Add in your cooked pasta and the blended sauce. Stir through then top with grated parmesan and enjoy!
