Goose Fat Roast Potatoes

Ingredients (7)

Serves 4

1kg potatoes

2 cloves garlic

1 handful fresh rosemary

1tsp black pepper

1tbsp table salt

1tsp flake salt

3tbsp goose fat


Step 1

Peel and slice the potatoes

Step 2

Parboil in salted water

Step 3

Drain the potatoes in a sieve or colander and shake them to fluff up the edges (this will make them crispy)

Step 4

Put the goose fat in an oven tray and heat up before adding the potatoes

Step 5

Season with flake salt and pepper and add garlic and rosemary to the tray

Step 6

Place in the oven at 220ºC for 40-50 minutes, flipping halfway
