Garlic, Thyme and Rosemary Potatoes

Ingredients (6)

Serves 2

4 medium sized potatoes

5 sprigs of rosemary

2 sprigs of thyme

9 garlic cloves

1/2 cup vegetable oil

Salt (to taste)

Method

Step 1

Peel your potatoes and chop into quarters. Preheat your oven to 200ºC


Step 2

Add them to a pan and top with cold water, bring to the boil and add 1 tbsp salt, 3 whole cloves of garlic and 3 sprigs of rosemary. Boil for 7-8 minutes until parboiled


Step 3

Add 1/2 cup vegetable oil to an overproof dish and put into the oven until very hot


Step 4

Drain the potatoes in a strainer and give them a really good shake to fluff them up


Step 5

Add the potatoes to the dish of hot oil and season with salt, pepper, chopped rosemary, chopped thyme and add 6 cloves of garlic


Step 6

Pop the dish into the oven for around 20 minutes


Step 7

After 20 minutes turn over each potato and pop them back into the oven for a further 25 minutes


Step 8

Remove from the oven and baste the potatoes in the garlic oil from dish. Transfer the potatoes to a plate and season with salt & fresh rosemary. Serve and enjoy!
