Fridge Clear Out Frittatas

Lots of astray vegetables in the fridge? Put them together and create these fridge clear out frittatas.


Serves 4


Step 1
Start by emptying your cherry tomatoes, bell pepper and garlic onto a baking tray. Cut the edge off of your garlic bulb and wrap it tinfoil. Cover your tomatoes and pepper in olive oil and salt. Roast at 425F for one hour.
Step 2
Next, in a pan add your cube of butter and fry your meat. Once browned, set aside in a bowl.
Step 3
Next, chop up one onion, one jalapeno and fry in the grease from the same pan as meat. Add in your spinach and let wilt down too.
Step 4
Next, whisk up your eggs and cream.
Step 5
Remove your vegetables from the oven. Place your onion mixture from the pan into a mixing bowl and add in the vegetables from the oven. Smash up the garlic and combine in there too.
Step 6
Pour over your egg mixture into the mixing bowl and stir well. Ladle your mixture into muffin trays that have been sprayed with non-stick spray. Top with cheese and bake for twenty minutes at 350F. Enjoy!
