Fishfinger Sandwich

Ingredients (14)

Serves 1

1 fillet of white fish

6 slice bread

3tbsp mayonnaise

2 mustard

1 lemon

3 gherkins

1tbsp capers

1 handful parsley

2 eggs

200g flour

200g breadcrumbs

2tsp salt

2tsp pepper

1 handful lettuce (optional)

Method

Step 1

Slice the fish into strips, chop the parsley, gherkins and capers, and beat the eggs in a bowl. Preheat the oven to 200ºC


Step 2

Add the flour to one plate and breadcrumbs to another and season each with 1tsp salt and 1tsp pepper


Step 3

Coat the fish in flour, egg, then breadcrumbs


Step 4

Put the fish in a baking dish and bake for 20 minutes


Step 5

Whilst the fish is cooking, make tartar sauce by mixing mayonnaise, mustard, the chopped gherkins, capers, parsley and lemon juice


Step 6

Toast the bread and top with your homemade tartar sauce, lettuce, fish fingers and a second slice of bread and you’re ready to serve and eat
