This is a classic sauce that goes great with eggs for a fancier breakfast than just cornflakes

Step 1
Place your butter in a jug and let for 1 minutes in your microwave
Step 2
Add the egg yolks to a bowl and add mustard, salt, lemon juice and cayenne to a bowl
Step 3
Using an immersion blender, blitz everything together whilst slowly drizzling in the hot butter until the mixture is fully emulsified. Serve and enjoy!
