Easy Egg & Veg Tortilla Breakfast

1 medium-large tortilla
4 eggs or egg whites
1 red chilli pepper
Salt, pepper, paprika to taste
Prep: Slice 1 chilli, chop some tomatoes and some spinach
In a baking pan, add a tortilla wrap, crack 4 eggs, add your sliced chilli, chopped tomatoes and chopped spinach.
Season to taste – I went with salt, pepper and paprika.
Top with mozzarella then bake in the oven for 10 minutes at 180
