Drunken Noodles

Ingredients (12)

Serves 6

375g flat rice noodles

400g firm tofu

1 white onion

4 cloves garlic

2-3 bird's eye chillies

2 spring onions

1 bunch fresh basil

6tbsp oyster sauce

2tbsp fish sauce

2tbsp brown sugar

6 lime wedges (optional, to serve)

Chilli flakes (optional, to serve)


Step 1

Press the tofu for around 10 minutes

Step 2

Make the sauce by mixing brown sugar, soy sauce, oyster sauce and fish sauce in a bowl

Step 3

Soak the rice noodles in boiling water for 10 minutes

Step 4

Slice the spring onions, garlic and chilli, dice the onion and remove the leaves from the basil stems

Step 5

Slice the tofu and stir fry the onion, chilli and garlic

Step 6

Get the tofu in, add the sauce and the noodles and toss until coated

Step 7

Add the basil and spring onion

Step 8

Serve topped with chilli flakes and a wedge of lime. Enjoy!
