This sticky sweet date cake will be your new favourite bake
Pit and chop the dates before heating in a saucepan with 250ml/1 cup water. Bring to the boil and then mash with a potato masher
Add baking soda, stir in and set aside for around 20 minutes to cool
Whisk 225g/1 cup butter with ½ cup/100g brown and granulated sugar until light and fluffy
Add in 1 egg at a time, beating each one in before adding the next
Add 1tsp vanilla, cinnamon, cardamom and clove and mix until well combined before adding the dates, flour, baking powder and a pinch of salt and whisk well
Grease a cake tin and pour in the mixture, smooth over to release air bubbles and bake for 40-45 minutes at 350ºF/180ºC
To make the caramel sauce, combine ½ cup/112g butter with heavy whipping cream, 1tsp vanilla, a pinch of salt and ½ cup/100g brown sugar in a saucepan and simmer for around 10 minutes until smooth and not grainy. Cool, pour over the cake and enjoy!
