These chocolatey, crunchy cookies are a delicious snack or dessert
Ingredients
Serves 10
70% dark chocolate (to taste)
¾ cup/70g oats
1 ¼ cups/170g plain flour
¾ cup/150g sugar
¾ cup/75g desiccated coconut
125g butter
2tbsp maple syrup
2tbsp vanilla essence
½tsp bicarbonate of soda
Method
Step 1
Mix plain flour, sugar, desiccated coconut, oats, bicarbonate of soda in a bowl and set aside. Preheat your oven to 160ºC
Step 2
In a separate bowl, add butter, maple syrup, vanilla essence along with 2tbsp water. Melt in a microwave for around 30 seconds
Step 3
Pour the butter mixture into the dry ingredients and mix well
Step 4
Knead with your hands until a dough has formed. Chop the chocolate and mix into the dough
Step 5
Roll the dough into balls, then place on a baking sheet and flatten out. Bake for 15 minutes, allow to cool on a baking rack, then serve and enjoy!
